Delicious homemade pizza dough topped with pesto, goat cheese, shredded mozzarella, and cherry tomatoes. This topping is perfect for a Sunday dinner or as a fun appetizer. It is a salty and creamy combination that will make your tastebuds sing. The freshness from the tomatoes add some nice acid and texture.

How to Make Homemade Pizza Dough:

The homemade pizza dough is simple and easy to make with the help of a stand mixture, all-purpose flour, salt, yeast, water, and olive oil. Activate the yeast. Pour all the ingredients into the stand mixer with the dough hook. Set aside covered. Punch down and portion. Set out and Bake!

An Ode to Friendship:

NYU Kimmel White Pizza inspired this recipe creation. It was my favorite pizza to get in college from the dining hall at the Kimmel Center. A thin crust pizza topped with pesto, goat cheese, shredded mozzarella cheese, and fresh tomatoes. It was creamy and delicious. God bless 20-year-old metabolism.

I have such great memories of college and specifically Kimmel Student Center where I spent a lot of time with my Florence crew, sorority sisters, and student government friends. One of the positive sides of COVID/Lockdown/PAUSE etc. has been connecting with my college friends. We have group calls, virtual chapter meetings, and play games.

These calls lift my spirits, keep me sane, and make me feel connected to the outside world. It generally involved a glass of wine (or three). We learn about the restrictions in different places but how they affect other people’s lives in different ways. We learn about each other’s struggles and empathize with each other’s circumstances.

Everyone is in a different place (country, city, suburbs, rural); circumstance (alone, parents, spouse, children); environment (house, apartment); and, work status (WFH, unemployed, furloughed, retired). Each bringing with it different challenges and benefits. And while so many things about our lives can be different, COVID/Lockdown/PAUSE has shown us how similar we all are as well.

We are all struggling in this new normal. We are all scared, anxious, confused, and overwhelmed. There are ups and downs and sometimes (some of us) cry.

But we are hopeful. We are confident with the knowledge that this will end. Certain, we will make memories together in the future. Attend each others’ milestones and celebrations. And take solace in the fact that good friends and good wine are always a winning combination.

Ingredients

  • 1/2 homemade pizza dough
  • 2 tablespoons pesto
  • 2 ounces crumbled goat cheese
  • 2 ounces shredded mozerella cheese
  •  1/3 cup cherry tomatoes, sliced in haf

Instructions

  1. Make homemade pizza dough.
  2. Spread pesto onto spread out pizza dough.
  3. Crumble goat cheese  evenly over the pesto.
  4. Sprinkle shredded mozerella on top of goat cheese.
  5. Sprinkle halfed cherry tomatoes on top of cheese.
  6. Bake in the oven 10-15 minutes at 475 degrees.
